Job Description Summary
This position is responsible for operating the blancher, sugar flume, retrograde, shredder, former head, dryer, and fryer to achieve product specification targets.
Job Description
Duties and Responsibilities:
Individuals in this position must:
Have a working knowledge of the equipment, piping layout and controls in area of responsibility.
Monitor and control the water level and water flush rate on the blancher.
Monitor and control the temperature and time on the blancher, dryer, and fryers to achieve product specification targets.Record all changes in the log and inform Team Leader before changes are made.
Monitor and control times and temperatures on the retrograde.
Monitor and control former head pressure, feed rates and RPM’s
Monitor and control shredder performance and change out shredder plates as needed to maintain quality.
Perform various tests to ensure oil quality, upstream color, SAPP, count/Lb. and salt concentrations are correct.
Monitor and control the amount of dextrose and salt added to the flume water supply tank to attain target color and salt content in the finished product.
Drain, clean, and refill the sugar flume water supply tank during breaks when instructed by the Production Lead or Team Leader.
Monitor and ensure oil levels and circulation valves on the fryers are adjusted correctly.
Transfer oil from holding tanks to other tanks and/or fryers, when needed.
Clean static product build-up out of the fryers and shredder plate area during breaks in line-flow or when instructed by Team Leader.
Control the amount of oil to lacos system.Check the condition of the lacos bags during the shift.Change the lacos bags at the beginning of each shift and/or when instructed by the Team Leader.
Check all oil recovery equipment to ensure it is operating properly to attain the highest oil recovery rate possible at any given line volume.Ensure recovered oil is being directed back to the proper line, verify with the Production Lead or Supervisor.The Production Lead or a Team Leader must approve all changes before they are made.
Follow weekend cleanup procedures to clean fryers and other equipment in the fryer Operator’s area of responsibility.Check with the Production Lead or Team Leader if unclear on procedures or responsibilities.
Inform Production Lead or Team Leader before any changes are made on the line.
Maintain a clean and safe work area.
Wear proper PPE’s when performing fryer cleanouts and containing fires.
Perform equal or lower rated job duties as assigned by the Production Lead or Team Leader.
Relay information about the status of the line flow on the radio to all affected parties, including packaging and refrigeration.
Enter results from various operator upstream tests (i.e. SAPP, Color, count/Lb.…) into the computer.
Ensure proper oil type and ingredients are cased on the line.Ensure ingredients used are manifested correctly.

Have good eye-hand coordination.
Have normal finger dexterity and range of motion.
Reach with his/her hands and arms occasionally.
Be able to lift up to 50 pounds occasionally.
Be able to push and pull heavy items occasionally.
Have vision abilities required by this job, which include: close vision, distance vision, depth perception, and ability to adjust focus.
Will be required to wear fryer suit when cleaning or around open fryer hoods
Work Environment
The work environment characteristics described below are representative of those an employee encounters while performing the functions of this job. The employee:
Will regularly work near moving mechanical parts.
Is frequently exposed to hot surroundings.
Is occasionally exposed to humid and cold environments.
Is occasionally exposed to sharp cutter plates.
May be occasionally exposed to fumes or airborne particles, toxic or caustic chemicals and vibration.
Will regularly work in an environment in which the noise level is usually loud.

- Possess working knowledge of how the equipment works.
- Understand all the piping and valves associated with the equipment.
- Be able to clean the equipment properly so the performance is not compromised.
- Have the ability and willingness to follow instructions.
- Read, understand, and obey all plant rules and practice safety as outlined in the employee handbook.
Education
- High School Diploma or GED Equivalent

This compensation is specific to this position and takes into account a number of variables. Actual compensation may be higher or lower in the range based on various factors, including, but not limited to a candidate’s work location, job duties, experience and expertise. A reasonable hourly estimate of the range for this role based on the variables previously mentioned is: $24.28 - $25.28
